Pumpkin Pie Spice Waffle Recipe
Fall is soon approaching and we are already craving anything pumpkin. We tried these yummy pumpkin pie spice waffles this weekend and they were sooooo good. Especially with maple syrup poured over the top with whip cream and pumpkin spice sprinkled on top! YUM!!! We found the recipe on pinterest but we did make our own adjustments to the recipe and thought we would post it since it is a keeper and we will be making these again.

Pumpkin Pie Spice Waffle Recipe
15 oz. pumpkin Puree
1/2 cup white sugar
1/2 cup brown sugar
2 c. milk {we used almond milk}
1 tsp. vanilla
1/4 cup melted coconut oil
2 c. flour
1 tsp pumpkin pie spice
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp salt
1/2 c. finely chopped pecans {optional}
Directions:
1. preheat waffle iron according to directions.
2. In a large bowl, whisk together coconut oil, both sugars, pumpkin puree, until smooth.
3. add the pumpkin pie spice and vanilla and stir.
4. In separate bowl, mix the flour, baking powder, and salt together.
5. Stir in flour mixture into the pumpkin mixture, just until combined.
6. In another bowl, whip with electric mixer the egg whites until they are white and fluffy with soft peaks.
7. Carefully and gently fold the egg whites into the batter.
8. Scoop about 3/4 cup of batter onto the waffle iron and cook. Waffle iron that I use
9. Top with butter, syrup, whipped cream pecans, and pumpkin spice if desired.
